Crafted in an ultra-modern and chic new brewery, Ohmine is seeking a new standard in sake production. The rice polishing ratio is 50%. A sake with a light body and taste, yet has a nice long finish with fruity hints of banana and mandarin orange.

Umeshu (Plum Sake), Choya

This sweet plum drink attracts even those who do not drink. It has a smooth, sweet, and undeniably fruity taste, with just enough acidity. Plum sake is made with young Japanese plums without using sulfites. It is served chilled as an apertif, a dessert drink, or even as a cocktail base.

Yuzu Omoi, Yamamoto Honke

Yuzu is a unique citrus that is similar to a combination of sweet grapefruit, mandarin orange, and pine leaves. It has a very soothing taste, it might resemble an herb more than fruit. This is a sweet and refreshing way to enjoy Yuzu's unique ability to sooth you.

Fans of either sweet or dry sake will both appreciate this balance. Produced with the exceptional water found in Northern Kyoto, Yamamoto Honke Junmai has flavors of elderflowers, sweet 'Mochi' rice, and anise.

Ginban Banshu 50, Junmai Ginjo, 720ml

Smooth, refreshing, and easy to drink. Moderately dry. Subtle flavors of apple and peach with a finish of melon.

Wakatake, Ginjo, 720ml

"Oni-koroshi" means, demon-slayer. The producers say in 1975 they revived this sake method by following an ancient text. What resulted is an easy to drink sake with flavors of stone fruit and a nice dry finish. Sake is often used for purifying against spirits. Despite the catchy name, demons are certainly not required.

Denshin Rin, Junmai Daiginjo, 720ml

Harsh winters create superior sake. Denshin Rin is brewed in Fukui -- a region known for its heavy snow fall and harsh winters. It is also brewed with a rare strain of rice for a more soothing taste compared to the typical Yamada-nishiki variety. It is a crisp, semi-dry sake, with hints of honey and fresh olives.

The hillside he identified is now called, "Baily Hill." The wines it now produces are exceptional and highlighted by bright red fruit flavors and delicate baking spices.
